Raspberry Peach Galette





Ever since summer started, I've been eating so much
fresh fruit. That's definitely one of my favorite things
about summer - all the amazing fruit.
I've been wanting to make something sweet with fruit
for awhile now. I always scroll through MarthaStewart.com
for inspiration. I was searching 'tarts' and came across
this galette recipe. I've never made a galette before. I
was a little apprehensive with making the dough,
I don't have a food processor. Although, I used a blender
 and it came out perfect. It was a lot easier to make
than I had anticipated.
We paired this with some of my favorite Haagen-Dazs
vanilla ice cream. I love to mix the warm and the cold
 together. It was delicious! I will definitely be making
this again.

Crabbing in Newport, Oregon


Last weekend we headed over to Newport, Oregon to meet some friends to go crabbing. This was our first time crabbing.
The weather was good, and we did a pretty good job catching crab. We caught Dungeness and Red Rock crab.
Well, the boys did most of the work, but we were great cheerleaders. 
It was pretty exciting to pull up the crab pod to see if you caught anything good.
We will definitely be going crabbing again soon!

My first crab catch! We threw it back, because it was so small, but it was pretty cute. 



Diesel had so much fun. He passed out as soon as he got in the car to go home. 


The next night Kris made a flatbread with the crab we caught, bacon, shallots, garlic, tomato, spinach, and little parmesan. It was soooooo good!
Also I'm still recovering from the MAJOR sunburn I got on my face. :(

Healthy Carrot Raisin Bran Muffins




1 1/2 cups whole wheat flour
1 1/2 cups oat bran
1/2 cup oats
1/2 cup brown sugar
2 teaspoons baking powder
2 teaspoons baking soda
1/4 cup golden raisins, chopped
1 large carrot, graded
1 cup almond milk
1 tablespoon honey
4 tablespoons extra virgin olive oil
2 eggs
1 tablespoon flax seeds




Preheat oven to 400 degrees.
Mix dry ingredients together, make sure all clumps are gone.
Add in wet ingredients and mix until combined.
Place batter in muffin tins, and let sit for 10 minutes.
Bake for 15 minutes, then let cool on cooling rack.




Store in an airtight container.


My boyfriend loves to get the 'Power Muffins' from Market Of Choice, so these are my version of them. Pretty healthy for the most part.

Berry Vanilla Layer Cake



CAKE:
1 boxed white cake mix
1 cup milk
1/4 cup butter (1/2 stick)
1 tsp vanilla extract

Butter and flour two round cake pans. 
Mix all ingredients and bake according to box directions. 




FROSTING: 
16 oz cream cheese
1 1/2 cups powdered sugar
1 tsp vanilla extract
1 cup heavy cream

Beat cream cheese, powdered sugar and vanilla until smooth and fluffy. 
In a mixing bowl with whisk attachment, mix heavy cream until stiff peaks form. 
Add in cream cheese/powdered sugar/vanilla mixture and beat until combined. 



BERRIES: 
1 small bag frozen mixed berries
1/4 cup sugar

Mix berries and sugar and place in fridge until ready to serve. 



CRUMB TOPPING:
1 box yellow cake mix
2 cups cold butter

Cut cold butter into chunks. 
Add cake mix and butter to bowl on stand mixer with paddle attachment and combine until crumbly. 
Bake in oven on cookie sheet, at 350 degrees until firm. 
Store in an air tight container.
